The culinary journey of Neon Cactus’ chef began in his grandmother’s kitchen, where the fascination of fire and cooking transformed simple ingredients into delicious meals.
At Neon Cactus, Chef AJ dives into the historical and cultural roots of each dish, focusing on traditional ingredients and techniques. He artfully blends these elements with modern cooking methods, ensuring the essence of each dish is preserved while exploring new flavors. His legacy is built on creativity, respect for tradition, and inspiring future chefs to innovate while honoring the past. His philosophy is that food is a universal language, connecting people across cultures, nourishing both body and spirit.
With roots in Venezuela and Spain, Chef Reuben’s culinary journey spans over 36 years across continents, from the bustling kitchens of Intercontinental and Hilton hotels to the legendary flavors of Michelin-starred restaurants and European patisseries. Starting young, his kitchen philosophy is grounded in discipline, loyalty, and a relentless pursuit of excellence. Driven by his faith and fueled by his passions—drumming and fitness—he brings a unique rhythm and dedication to every dish.
