Our Story
Founded in 2024, Neon Cactus sprang from a love for Mexican cuisine and the vibrant energy of global flavors. From the outset, the vision was clear: to create a fun, high-energy dining experience, where our lively colors reflect the restaurant’s bold menu and passionate team. Neon Cactus quickly became a welcoming spot for families and friends in Fairview’s community.
“We infuse traditional Mexican cooking methods with global influences—like Asian-inspired tacos with Korean Bulgogi beef and kimchi or Chinese Orange Chicken taco with a twist.” This fusion allows us to celebrate the vibrancy of Mexican cuisine while also exploring new tastes and textures. The result is a dining experience that feels both familiar and adventurous at the same time.
Behind the Chef’s Apron: Our Chef
The culinary journey of Neon Cactus’ chef began in his grandmother’s kitchen, where the fascination of fire and cooking transformed simple ingredients into delicious meals. At Neon Cactus, Chef AJ dives into the historical and cultural roots of each dish, focusing on traditional ingredients and techniques. He artfully blends these elements with modern cooking methods, ensuring the essence of each dish is preserved while exploring new flavors.
His legacy is built on creativity, respect for tradition, and inspiring future chefs to innovate while honoring the past. His philosophy is that food is a universal language, connecting people across cultures, nourishing both body and spirit.

Our Goal: Taco ‘bout giving back!
At Neon Cactus, giving back is part of who we are. Through weekly Give Back Days, we partner with local schools, nonprofits, booster clubs, and community groups to raise funds and bring people together over bold, globally inspired Mexican flavors. From supporting youth and first responders to promoting wellness and fighting food insecurity, every meal helps us reinvest in the Collin County community we proudly serve.
